Baked Beef Brisket
- 2 Tbsp olive oil
- 1 medium chopped onion
- 1/2 cup ketchup
- 1 tsp chili powder
- 1/4 cup water
- 2 Tbsp maple syrup
- 1 Tbsp prepared mustard
- 1 tsp worcestershire sauce
- 1/8 tsp ground cloves
- 1 – 4 lb beef brisket
4 hours before, or day ahead. In 2 quart saucepan, heat oil and saute onion, add next 7 ingredients, heat to boiling. Place brisket in 13×9 baking dish. Pour sauce over meat, cover with foil. Bake 325 degrees for 3 hours or until fork tender. Turn halfway through baking if desired. Serves 4-6

Baked Top Sirloin Steak
- 1 Top Sirloin Steak – 1 1/2 – 2 lbs
- 1 – 2 Tbsp olive oil
- Salt & Pepper
- 1/4 large onion sliced
- 1 cup water
- 1/3 – 1/2 cup red wine
(or in place of water and wine, use 1 1/2 cups unsalted beef broth)
Preheat oven to 350 degrees.
Lightly salt and pepper both sides of steak.
Heat olive oil in cast iron skillet.
Place steak in skillet with onions around it. Sear 3 – 4 minutes per side.
Pour in water and wine.
Cover and bake at 350 degrees for 1 hour or until meat is fork tender.
Serve with juices.
Basic Marinade
- 1/4 cup red wine vinegar
- 2 Tbsp olive oil
- 1 Tbsp low sodium soy sauce
- 2 Tbsp ketchup
- 1 tsp minced garlic
- 2 Tbsp chopped onion
- 1 tsp dry basil
- 1/4 tsp pepper
Combine ingredients and marinade 1 – 1 1/2 lb beef steak for 1 hour or overnight. Makes 3/4 cup
Cheesy Meatballs
- 1 1/2 lb ground beef
- 1/2 cup parmesan cheese
- 1/2 cup ketchup
- 1 Tbsp Mrs Dash (or other no salt mixed herbs)
- 1/2 cup quick oats
- 1 egg
Mix all ingredients together thoroughly and shape into 18-20 balls. Bake on greased baking sheet at 350 degrees for 20-30 minutes until cooked through. Serve with your favorite spaghetti sauce or baked beans.
Fiery Beef Satay
- 1 1/2 lb beef steak of your choice
Marinade
- 1/2 cup Dijon Pub style mustard
- 1/4 cup low sodium soy sauce
- 1/4 cup honey
- 2 Tbsp fresh lime juice
- 4 tsp minced garlic
- 1 tsp crushed red pepper (more or less to your taste)
In 2 cup bowl stir together marinade ingredients. Place steak in shallow marinade dish, pour marinade over steak. Marinate for 1 hour or overnight in desired. Remove beef from marinade. Grill or broil to desired doneness.
Mexican Hamburger Helper
- 1 lb ground beef
- 1 medium onion chopped
- 1 Tbsp minced garlic
- 2 tsp dry cilantro
- 2 Tbsp taco seasoning
- 1 – 14.5 oz can chopped tomatoes
- 1 pint frozen corn
- 4 oz cream cheese
- 4 cups dry egg noodles cooked to package directions
- Parmesan cheese
Saute ground beef, onion and garlic in a large skillet. Add Taco seasoning, cilantro, tomatoes and corn. Simmer on low heat until thickened and heated through. Add cream cheese, stir it in as it melts. Serve on egg noodles, sprinkle with parmesan cheese.
*Also, if you like canned beans, stir in 1 can of your choice with the cream cheese.
Porterhouse steak
Salt or rub with desired seasonings. Heat grill on high. Grill 3 minutes on 1st side. Turn grill to medium heat then grill on 2nd side 5-7 minutes to desired doneness.
Shepherd’s Pie Mexican Style
- 1 1/2 lbs groud beef
- 2 cups frozen corn – partially thawed
- 1 to 1 1/2 cups salsa
- 1 1/2 cups shredded mexican style cheese
- 4 to 5 medium potatoes (about 1 qt mashed)
Preheat oven to 350 degrees. Peel, cube, boil and mash potatoes. Brown ground beef in skillet until no longer pink. Stir in corn and salsa until blended. Sprinkle cheese on top, then evenly spread mashed potatoes over meat mixture. Sprinkle with paprika. Bake 20-30 minutes until bubbly on the edges.
Sirloin Tip Roast
- 1 – 3 lb beef sirloin tip roast
Rub
- 1/2 tsp thyme
- 1/2 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1 1/4 tsp paprika
- 1/8 tsp cayenne powder
- 1/2 tsp oregano
- 1 tsp salt (more or less to your taste)
- 2 Tbsp olive oil
In a small bowl combine all spices with olive oil and let sit for 15 min.
Preheat oven to 350 degrees. Oil or line baking pan with foil. Place roast in pan, rub spices on all sides of roast. Roast 1 to 1 1/2 hours or until meat thermometer reads 135-140 for rare or 145-150 for medium. Roast will keep cooking once removed from oven.
Sloppy Joes
- 1 lb ground beef
- 7 oz crushed tomatoes or sauce
- 1/4 cup chopped onion
- 1/2 tsp garlic granules or powder
- 1/2 Tbsp low sodium soy sauce
- 3 Tbsp ketchup
- 3 Tbsp vinegar
- 1/8 tsp dry mustard
- 1/3 cup maple syrup
Brown ground beef with onion in large skillet. Add remaining ingredients except maple syrup. Simmer over medium to low heat until sauce is thickened. Add maple syrup and heat through. Serve on toasted hamburg buns. Top with shredded cheese if desired. Serves 4-5
